Healthy Vegan Olive Oil muffins

Servings: 18

Ingredients

  • 200g of all purpose wheat flour

  • 2 teaspoons baking powder

  • 50g black olives, pitted and coarsely chopped 

  • 70g spring onions (scallions), coarsely chopped (including the green part)

  • 1-2 teaspoons dried mint 

  • 80g A³ Organic Extra Virgin Olive Oil

  • Orange rind

  • 120g orange juice

  • fresh coriander (cilantro), coarsely chopped (optional)

  • 1 tablespoon orange juice 

  • 2 tablespoons white sesame seeds

Directions

  1. Mix the flour, the baking powder, the olives, the onion, the coriander (cilantro), the mint, the A3 organic extra virgin olive oil, the 120g orange juice and the orange rind. 

  2. Mix well, form balls of about 35g each and place into muffin cups.

  3. Cover with a little orange juice and sprinkle with the sesame seeds.

  4. Bake in a preheated oven at 180 ᵒC for about 30 minutes until golden brown.
