Exposure to heat tends to alter the healthy chemicals in olive oil. Most kitchen counters tend to get hot. Store your olive oil in a cool and dark place (preferably below 18 ᵒC) to avoid exposure to heat.

Exposure to light is detrimental to the quality of olive oil. It's best to store in a dark bottle or in a cool dark place as mentioned above.

Exposure to oxygen
Exposure to oxygen causes the olive oil to oxidise, altering its freshness and acidity. Store your olive oil in a tightly closed container.

Storing in plastic containers
Avoid storing your olive oil in certain plastic containers as the olive oil reacts with some plastics. Some metal containers like copper and iron may also react with the oil altering its quality and making it unsafe.
