Spaghetti with olive oil and garlic
(Aglio e olio)

Ingredients

  • 500g uncooked spaghetti

  • 1/2 cup A³ Extra Virgin Olive Oil

  • 4 garlic cloves, crushed

  • 1 cup chopped fresh parsley

  • Salt

  • Black pepper

  • Parmesan

  • Optional crushed red pepper flakes

Directions

  1. Cook spaghetti pasta to al dente (according to package instructions), in plenty of boiling water with a pinch of salt and a few drops of olive oil.

  2. When the pasta is ready, remove from heat and drain the water. 

  3. In a large pan heat the extra virgin olive oil, the garlic, a pinch of salt and the crushed red pepper flakes (optional) over medium heat. Cook until garlic is golden and before olive oil bubbles.

  4. Add the pasta to the pan and toss to coat thoroughly.

  5. Add black pepper, parsley and parmesan and toss again.

  6. Serve while hot and top with more parmesan if you like.
